  • 1 1/2 cups broccoli florets, 1 cup grated cheddar cheese, 1/2 cup grated mozzarella cheese, 1/4 cup all-purpose flour, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon garlic powder, 2 tablespoons butter, 2 large eggs, 1 cup frozen veggie tots, 6 slices of cooked bacon, crumbled, 1/4 cup chopped fresh parsley

Instructions

Preheat your waffle iron according to the manufacturer’s instructions. In a large bowl, whisk together flour, salt, pepper, and garlic powder.

Add grated cheddar and mozzarella cheese, and mix until well combined.

Add broccoli florets and mix until they’re evenly distributed throughout the cheese mixture. Add melted butter, and mix until you get a crumbly texture.

Press half of this mixture into your preheated waffle iron, spreading it evenly to fill the iron.

Cook for about 5 minutes, or until the edges are golden brown and crispy. Repeat with the remaining mixture.

While waffles are cooking, scramble 2 large eggs in a bowl and set aside.

Once waffles are done, top each with scrambled eggs, a few veggie tots, some crumbled bacon, and a sprinkle of chopped parsley. Serve hot and devour!

Use up any leftover veggie tots or broccoli to make this recipe more budget-friendly.

Make sure to not overcrowd the waffle iron, as it may prevent the waffles from cooking evenly.

For an extra crispy crust, cook the waffles for an additional 30 seconds to 1 minute.
