Blueberry Coulis

Sweet and tangy, this homemade blueberry coulis is a flavorful trio of juicy blueberries, sugar, and lemon juice.

Perfect for topping yogurt, ice cream, or pancakes, this sweet syrup is incredibly easy to make and will elevate your breakfast or dessert game with its vibrant purple hue and intense fruity flavor.

Ingredients

  • 1 cup fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons water
  • 1 tablespoon freshly squeezed lemon juice

Instructions

Rinse the blueberries and pick out any stems or debris. In a medium saucepan, combine the blueberries, sugar, water, and lemon juice.

Bring the mixture to a boil over medium-high heat, stirring occasionally.

Reduce the heat to medium-low and simmer for about 15-20 minutes, or until the blueberries have broken down and the mixture has thickened into a syrupy consistency. Mash the blueberries with a potato masher or the back of a spoon to release any remaining juices.

Strain the mixture through a fine-mesh sieve into a bowl, pressing on the solids to extract as much liquid as possible.

Discard the solids and let the coulis cool to room temperature. Store it in an airtight container in the refrigerator for up to 2 weeks.

Notes

Use fresh blueberries for the best flavor and texture, but frozen will work in a pinch. Don’t over-rinse the blueberries, just give them a quick rinse to remove any dirt or debris.

If using frozen blueberries, make sure to thaw them first and pat dry with a paper towel to remove excess moisture.

You can adjust the amount of sugar to your taste, but keep in mind the coulis will thicken as it cools. Be patient and stir occasionally while the mixture simmers, as it can easily burn.

Strain the mixture carefully, making sure to get as much liquid as possible out of the solids.

You can use this coulis as a topping for pancakes, waffles, or even ice cream – it’s really versatile!
