Ingredients
- Watermelon – 1 small to medium size (about 5-6 pounds)
- Feta cheese – 1/2 cup crumbled
- Mint leaves – 1/4 cup chopped fresh
- Balsamic glaze – 2 tablespoons
- Lime juice – 1 tablespoon
- Salt – to taste
- Honey – 1 tablespoon
- Edible flowers or microgreens – for garnish (optional)
Instructions
Cut the watermelon into 1-inch thick slices, making sure each slice is large enough to hold a few toppings.
You’ll need about 8-10 slices in total.
Arrange the watermelon slices on a large platter or individual plates, leaving a little space between each slice to create a “crust” for your pizza.
Sprinkle the crumbled feta cheese over the watermelon slices, making sure to cover the entire surface.
You can be a bit generous with the cheese, as it will add a nice salty flavor to balance out the sweetness of the watermelon.
Next, sprinkle the chopped fresh mint leaves over the feta cheese.
You can use as much or as little as you like, depending on your personal taste.
Drizzle the balsamic glaze over the mint leaves, using about 1-2 teaspoons per slice.
You can always add more, but start with a small amount and adjust to taste.
Squeeze a sliver of fresh lime juice over the balsamic glaze, making sure to cover the entire surface.
Use about 1/4 teaspoon per slice.
Sprinkle a pinch of salt over the lime juice to bring out the flavors.
Finally, drizzle a small amount of honey over the top of each slice, using about 1/4 teaspoon per slice.
Garnish with edible flowers or microgreens, if desired, to add a pop of color and freshness.
Serve immediately and enjoy!

Make sure to choose a ripe but firm watermelon for the best results, as it will be easier to slice and hold its shape. Use high-quality feta cheese for the best flavor, and don’t be afraid to get a bit generous with the sprinkling – it’s a pizza, after all! If you can’t find fresh mint leaves, you can substitute with basil or even cilantro, but the mint is really what makes this dish pop.
Balsamic glaze can be found at most grocery stores or specialty food stores, but if you can’t find it, you can make your own by reducing balsamic vinegar on the stovetop until thick and syrupy.
Don’t overdo it on the lime juice, as it can quickly overpower the other flavors – a little goes a long way!
