Ingredients

  • 1 1/2 cups cooked beets
  • 2 cloves garlic, minced
  • 1 1/4 cups chickpeas
  • 1/4 cup lemon juice
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 3 tablespoons water
  • Optional garnish: paprika, parsley, pine nuts

Instructions

Preheat your oven to 400°F (200°C). Wrap the beets in foil and roast for about 45-50 minutes, or until tender when pierced with a fork.

Let them cool, then peel and chop them into small pieces.

In a blender or food processor, combine the roasted beets, garlic, chickpeas, lemon juice, tahini, olive oil, and salt. Blend on high speed until smooth and creamy, stopping to scrape down the sides as needed.

Add the water and continue blending until the hummus is smooth and creamy.

Taste and adjust the seasoning as needed. Transfer the hummus to a serving bowl.

If desired, garnish with a sprinkle of paprika, some chopped parsley, or a few pine nuts.

Serve with your favorite dippers, such as pita chips or veggies.

Notes

Roasting the beets brings out their natural sweetness, so try not to skip this step! You can also use pre-cooked or canned beets if you’re short on time. If you prefer a lighter color and milder flavor, use only 1 cup of beets.

For a vibrant pink color, use the full 1 1/2 cups.

To toast pine nuts, simply spread them on a baking sheet and bake in a 350°F oven for 5-7 minutes, or until fragrant and lightly browned. You can thin out the hummus with a little more water or lemon juice if you prefer a lighter consistency.

For a more intense garlic flavor, roast the garlic cloves in the oven with the beets until soft and mashed, then mince and add to the blender.

Remember, you can always adjust the amount of lemon juice to taste, depending on how tangy you like your hummus.
