Avocado Lime Dressing

Ingredients

  • 2 ripe avocados, diced
  • 1/2 cup freshly squeezed lime juice
  • 1/2 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper, to taste

Instructions

Peel and pit the avocados and place them in a blender or food processor.

Add the lime juice, olive oil, cilantro, garlic, Dijon mustard, honey, salt, and pepper to the blender.

Blend the mixture on high speed until smooth and creamy.

Taste the dressing and adjust the seasoning as needed.

Cover and refrigerate the dressing for at least 30 minutes to allow the flavors to meld together.

Give the dressing a good stir before serving.

This recipe makes about 5 servings, so feel free to store any leftovers in an airtight container in the refrigerator for up to 3 days.

Notes

For a lighter consistency, you can add a bit more lime juice or olive oil.

If you prefer a thicker dressing, add a bit more avocado or a tablespoon of Greek yogurt.

Make sure to use ripe avocados for the best flavor and creamy texture.

You can also customize the dressing to your taste by adding other ingredients such as diced jalapeño for some heat or some grated ginger for an Asian-inspired flavor.
