Avocado Fruit Salad

This refreshing Avocado Fruit Salad is a symphony of flavors and textures, combining creamy avocado, sweet mixed berries, tangy pineapple, and crunchy peaches, all tied together with a zesty lime juice and honey dressing, perfect for hot summer days or a quick pick-me-up any time of the year.

Ingredients

  • 3 ripe avocados, diced
  • 2 cups mixed greens (such as arugula, spinach, and/or lettuce)
  • 1 cup mixed berries (such as blueberries, strawberries, and raspberries)
  • 1 cup diced fresh pineapple
  • 1 cup diced fresh peaches
  • 1/2 cup chopped fresh mint leaves
  • 1/2 cup crumbled feta cheese (optional)
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon honey
  • Salt to taste

Instructions

Start by preparing your ingredients: dice the 3 ripe avocados and set aside. Next, wash and dry the 2 cups of mixed greens, then chop the 1/2 cup of fresh mint leaves.

In a separate bowl, mix together the 1 cup of mixed berries, 1 cup of diced fresh pineapple, and 1 cup of diced fresh peaches.

In a large bowl, combine the mixed greens, avocado, and berry-pineapple-peach mixture. Sprinkle the chopped fresh mint leaves and crumbled feta cheese (if using) on top.

In a small bowl, whisk together the 2 tablespoons of freshly squeezed lime juice and 1 tablespoon of honey until well combined.

Pour the lime juice-honey mixture over the salad and toss gently to coat. Season with salt to taste, then cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Serve chilled, dividing the salad among 9 plates or containers.

Notes

For best results, use ripe avocados that are slightly soft to the touch, as they’ll be easier to dice and will hold their shape in the salad. Don’t worry if your mixed greens are a bit wilted – a quick wash and dry will perk them right up! Fresh mint leaves can be substituted with other herbs like basil or cilantro if you prefer.

If you’re not a fan of feta, try swapping it out for goat cheese or crumbling some chopped nuts instead.

Make sure to whisk that lime juice and honey mixture until it’s smooth and syrupy – it makes all the difference! Refrigerate the salad for at least 30 minutes to allow the flavors to meld together, but you can also make it ahead and keep it chilled for up to 4 hours before serving.
