Ready Time

35 mins

Yields

9 servings

Ingredients

  • 3 pounds fresh Brussels sprouts, trimmed and halved
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

Preheat your air fryer to 400°F (200°C).

In a large bowl, toss the Brussels sprouts with the olive oil, salt, and black pepper until they’re evenly coated.

Spread the Brussels sprouts in a single layer on the air fryer basket.

You might need to cook them in batches depending on the size of your air fryer.

Cook for 10-12 minutes, shaking the basket halfway through.

While the Brussels sprouts are cooking, mix the mayonnaise, Dijon mustard, maple syrup, apple cider vinegar, and garlic powder in a small bowl until smooth.

Once the Brussels sprouts are tender and caramelized, remove them from the air fryer and toss them with the maple mustard mayo until they’re fully coated.

Serve hot and enjoy!

Notes

Using fresh Brussels sprouts will give you the best flavor and texture, so try to avoid using frozen or older sprouts. If you find the maple syrup too sweet, you can reduce the amount to 1 tablespoon or even omit it if you prefer.

Since air fryers vary in size, be prepared to cook the Brussels sprouts in batches if necessary.

You want them to have enough room to cook evenly, so don’t overcrowd the basket. If you’re worried about the Brussels sprouts getting too dark or burnt, keep an eye on them during the last 2 minutes of cooking and shake the basket again if needed.

You can also reduce the cooking time if you prefer a lighter roast.

For an extra crunchy texture, try roasting the Brussels sprouts at a higher temperature (420°F/220°C) for a shorter time (8-10 minutes). Just be sure to keep an eye on them to avoid burning.

You can make the maple mustard mayo ahead of time and store it in the fridge for up to 1 week.

It’s a great dip for veggies or as a sandwich spread. This recipe makes 9 servings, which is perfect for a dinner party or a healthy snack for the week.

You can easily double or triple the recipe if you need more.
