Slow Cooker Honey-Dijon Glazed Carrots

These glazed carrots are the perfect side dish for any meal. They’re cooked in a slow cooker, so they’re nice and tender, and they have a delicious honey-Dijon glaze that really brings out their flavor. I always make extra because they never last long!

Ingredients

  • 3 lb. carrots, peeled and cut 1/2 inch thick on a bias
  • 1 1/4 cups water
  • 2 tsp. kosher salt, divided
  • 2 tbsp. unsalted butter, melted
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tbsp. fresh sage, chopped
  • 1/4 tsp. black pepper

Instructions

1. Place carrots into slow cooker and add water and 1 tsp salt.

2. Cook on low for 4-6 hours, or until tender when pierced with a fork.

3. Drain water from carrots and return to slow cooker.

4. In separate bowl, whisk together remaining salt, butter, honey, Dijon mustard, sage, and black pepper until blended well.

5. Pour honey-Dijon mustard glaze over carrots and toss to coat evenly.

6. Season with additional salt and pepper if desired taste buds call for it!

7 . Reduce slow cooker’s temperature to warm – now they’re ready to serve!
