  • 1 pound of fresh, raw shrimp, peeled and deveined
  • 1/2 cup of freshly squeezed lime juice
  • 1/4 cup of chopped red onion

  • 1/4 cup of chopped fresh cucumber
  • 1 jalapeño pepper, seeded and chopped
  • 1 avocado, peeled, pitted, and sliced
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions

Rinse the shrimp under cold water, then pat them dry with paper towels to remove excess moisture.

In a large bowl, combine the shrimp, lime juice, red onion, cilantro, cucumber, and jalapeño pepper.

Make sure the shrimp are completely covered with the marinade.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the shrimp to “cook” in the lime juice.

Just before serving, stir in the salt and black pepper.
