One Pan Lemon Garlic Chicken And Asparagus

- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 teaspoons olive oil
- 4 cloves garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 1/2 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 pounds fresh asparagus, trimmed
- 2 lemons, sliced
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, whisk together olive oil, garlic, lemon juice, chicken broth, Dijon mustard, thyme, salt, and pepper.
Add the chicken pieces to the bowl and toss to coat.
In a large oven-safe skillet, arrange the asparagus in a single layer.
Brush with a little bit of the marinade from the bowl.
Add the chicken pieces on top of the asparagus, leaving a little space between each piece.
Arrange the lemon slices on top of the chicken.
Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the chicken is cooked through and the asparagus is tender.
Remove from the oven and let it rest for a few minutes before serving.
Serve hot and garnish with fresh herbs, if desired.
Notes
You can customize this recipe to your taste by adjusting the amount of garlic or lemon juice to your liking. Make sure to pat the chicken dry with paper towels before cutting it into pieces to help the marinade stick better.
