  • 1/4 cup (55g) unsalted butter, at room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (120g) semi-sweet chocolate chunks
  • 1 cup (120g) mixed berries (fresh or frozen)

Instructions

Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.

In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.

Set aside.

In a large bowl, using an electric mixer, beat the butter until creamy, about 2 minutes.

Add the egg and vanilla extract, beating until well combined.

Gradually mix in the dry ingredients until just combined, being careful not to overmix.

Stir in the chocolate chunks and mixed berries.

Pour the batter into the prepared baking pan and smooth the top.

Bake for 35-40 minutes or until a toothpick inserted in the center comes out with a few moist crumbs attached.

Let the brownies cool completely in the pan before cutting into 7 squares and serving.

Notes

Make sure to adjust the oven racks to ensure even baking, as the brownies can be quite thick.
