Watermelon Gazpacho

This chilled soup is bursting with juicy watermelon, crunchy cucumber, and a hint of smokiness from the paprika, making it a perfect summer treat that’s both revitalizing and utterly delicious.

Ingredients
- 4 cups diced seedless watermelon (about 1 small to medium-sized melon)
- 2 cups diced cucumber (about 2 medium-sized cucumbers)
- 1 cup diced bell pepper (about 1 large bell pepper)
- 1 cup diced red onion (about 1 small to medium-sized onion)
- 2 medium cloves garlic, minced
- 1/2 cup chopped fresh mint leaves
- 1/4 cup chopped fresh cilantro leaves
- 2 tablespoons lime juice
- 1 teaspoon smoked paprika
- Salt, to taste
- Water, as needed
Instructions
Add the diced watermelon, cucumber, bell pepper, and red onion to a blender or food processor. Blend the mixture until smooth.
Add the minced garlic, chopped mint leaves, chopped cilantro leaves, lime juice, and smoked paprika to the blender.
Blend until well combined. Taste the gazpacho and add salt as needed.
You can also add water to thin out the gazpacho if you prefer a thinner consistency.
Chill the gazpacho in the refrigerator for at least 30 minutes to allow the flavors to meld together. Serve the Watermelon Gazpacho chilled, garnished with additional mint leaves and a sprinkle of smoked paprika if desired.
Note: You can also serve the gazpacho in small cups or glasses as a refreshing and light snack or appetizer.
Notes
For the best flavor, make sure to use a ripe, sweet watermelon.
If it’s not sweet, your gazpacho won’t be sweet either.
Don’t over-blend the mixture, or you’ll end up with a watery consistency.
You want it to still have some texture from the veggies.
If you’re not a fan of strong garlic flavor, you can reduce the amount of garlic or even omit it altogether.
Fresh herbs make a big difference in this recipe, so don’t skip them.
You can also add other fresh herbs like basil or parsley if you like.
Adjust the amount of lime juice to your taste.
If you prefer a more intense lime flavor, add more juice.
Smoked paprika adds a nice smokiness to the gazpacho, but you can omit it if you don’t have it or prefer a different spice.
You can make this recipe ahead of time and store it in the fridge for up to 24 hours.
Just give it a good stir before serving.
This recipe makes 7 servings, but you can easily double or triple the recipe if you need more.
