Ready Time

15 mins

Yields

9 servings

Ingredients

  • 1 1/2 cups plain whole-milk yogurt
  • 3 cups mixed tropical fruit (such as pineapple, mango, kiwi, and passionfruit)
  • 1/2 cup granola
  • 1/4 cup shredded coconut
  • 1/4 cup chopped pecans
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • Pinch of salt

Instructions

Start by cutting the tropical fruit into bite-sized pieces and place them in a large bowl. In a separate bowl, whisk together the honey, lime juice, and a pinch of salt until well combined.

Set the honey mixture aside for now.

In another bowl, mix together the granola, shredded coconut, and chopped pecans. You’ll be using this mixture as the crunchy topping for your parfait.

Now, scoop about 1/4 cup of the yogurt into the bottom of a glass or parfait dish.

You can use any type of glass you like, but a tall clear one will show off the layers nicely. Next, add a layer of tropical fruit on top of the yogurt.

You can use as much or as little fruit as you like, depending on your personal preference.

Drizzle a spoonful of the honey mixture over the fruit, making sure they’re all coated in the sweet and tangy goodness. Sprinkle a spoonful of the granola mixture over the honey layer.

This is where the crunch comes in! Repeat the layers one more time, starting with the yogurt, then the fruit, the honey mixture, and finally another sprinkle of the granola mixture.

You should now have a beautifully layered parfait that’s almost too pretty to eat. Almost.

Repeat the process to create 8 more parfaits, and you’ll have a total of 9 tropical fruit and yogurt parfaits ready to be devoured!

Notes

Use any type of tropical fruit you like, but try to choose a variety of colors to make the parfait visually appealing. If using a particularly juicy fruit like pineapple, pat it dry with a paper towel before layering to prevent sogginess.

Don’t overmix the honey mixture, or it’ll become too thick and sticky.

You want it to be smooth and easy to drizzle. Feel free to customize the crunchy topping by adding or substituting different nuts or seeds, like almonds or chia seeds.

Use a tall clear glass to show off the layers, but if you don’t have one, a regular glass or even a mason jar will work just fine.

If you’re planning ahead, prepare the honey mixture and granola mixture up to a day in advance, then assemble the parfaits just before serving. Keep the parfaits refrigerated until serving, and consider making them just a few hours beforehand to ensure the flavors meld together nicely.

Consider serving the parfaits as a light breakfast, snack, or even dessert – they’re versatile and delicious at any time of day!
