Tortilla Pizza with Onions, Mushrooms, and Ricotta

This tortilla pizza is one of my favorite quick and easy meals. It’s perfect for a busy weeknight when you don’t have time to make a traditional pizza from scratch. The tortillas provide a crispy, flavorful crust that pairs perfectly with the creamy ricotta, savory mushrooms, and onions. You can also add any other toppings you like, such as pepperoni or sausage. This recipe is sure to become a family favorite!


  • 1 tbsp extra virgin olive oil, plus more for brushing on tortilla and pan
  • 1 small red onion, halved and thinly sliced
  • Pinch sugar
  • 1 tsp balsamic vinegar
  • 2 large flour tortillas (sandwich wraps)
  • 1/2 cup Asiago cheese, shredded
  • 2/3 cup ricotta cheese
  • 4 button or cremini mushrooms, trimmed and thinly sliced


1. Preheat oven to 450°F and place racks in upper and lower thirds.

2. Heat 1 Tbsp olive oil in small sauté pan over medium high heat, add sliced onions, and cook stirring occasionally until they begin to soften.

3. Add sugar and balsamic vinegar, cook a few more minutes until onions are thoroughly softened and translucent, then remove from heat.

4. Brush sheet pan with olive oil and place tortilla on it. Brush tortilla with olive oil and sprinkle with half cup shredded Asiago cheese.

5. Add ricotta cheese (1/4 cup for each tortilla), mushrooms, caramelized onions, salt,and pepper to taste .

6. Bake until crust is crisp and brown all over (10 minutes although time may vary depending on oven), rotating the sheet pans halfway through cooking so they bake evenly
