Yields

7 servings

Ingredients

  • 2 1/2 cups frozen beets
  • 1 1/2 cups frozen mixed berries
  • 1/2 cup frozen pineapple
  • 1/2 cup plain Greek yogurt
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • Ice cubes (as needed)

Instructions

Add the frozen beets, frozen mixed berries, and frozen pineapple to a blender and blend on high speed until smooth. Add the Greek yogurt, unsweetened almond milk, honey, and vanilla extract to the blender and blend until well combined.

Taste and adjust the sweetness by adding more honey if needed.

Add ice cubes to the blender if you want a thicker consistency and blend until the ice is fully incorporated. Pour the smoothie into 7 glasses and serve immediately.

Notes

Use fresh beets if you can’t find frozen ones, just peel and chop them before adding to the blender.

If you’re not a fan of Greek yogurt, you can substitute with regular yogurt or even coconut yogurt for a dairy-free option.

You can customize the sweetness to your taste by adding more honey or using another sweetener like maple syrup.

You may need to stop the blender and scrape down the sides with a spatula a few times to get everything fully incorporated.

Feel free to add other ingredients to make the smoothie your own, like a handful of spinach or protein powder for an extra boost.

If you want a thicker consistency, add more ice cubes or even a banana for a creamier smoothie.

You can store any leftover smoothie in an airtight container in the fridge for up to 24 hours.
