Ingredients

  • 1 pound ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 medium-hot red chili peppers, diced
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin powder
  • 1/4 cup water
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

Brown the ground beef in a large pot over medium-high heat, breaking it up into small pieces as it cooks, until it’s no longer pink, about 5-7 minutes. Add the diced onion, minced garlic, diced red bell pepper, and diced red chili peppers to the pot.

Cook until the vegetables are softened, about 5 minutes.

Stir in the chili powder, ground cumin, dried oregano, cayenne pepper, salt, black pepper, and cumin powder. Cook for 1 minute.

Add the diced tomatoes, kidney beans, black beans, and water to the pot.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, stirring occasionally. Taste and adjust the seasoning as needed.

Serve hot, garnished with chopped fresh cilantro if desired.

Notes

Use 85/15 or 80/20 ground beef for best flavor.

Don’t overcook the beef, it should be browned but not dry.

Use gloves when handling hot peppers to avoid skin irritation.

For a thicker chili, use less water or simmer longer.

For a spicier chili, add more red peppers or increase the cayenne pepper.

You can also add other peppers, such as jalapenos or Anaheim peppers, to customize the heat level.

Cilantro adds a fresh flavor, but you can omit it if you’re not a fan.

This recipe freezes well, so consider making a double batch and freezing some for later.
