Sunflower Drop Cookies

Ingredients

  • 1 cup all-purpose flour, 1 cup whole wheat flour, 1 teaspoon salt, 1 teaspoon baking soda, 1 cup butter or margarine, 5 tablespoons brown sugar, 5 tablespoons white sugar, 2 eggs beaten well, 1 teaspoon vanilla extract or almond extract, 1 cup sunflower seeds with the hulls removed (or other nuts such as chopped almonds or walnuts), 2 cups flaked coconut.

Instructions

Preheat oven to 350 degrees F. In a large bowl, cream together sugar and butter or margarine. Beat in eggs and vanilla extract. Stir in flour, salt and baking soda. Add coconut and sunflower seeds. Mix together well. Drop dough by spoonfuls onto a greased cookie sheet. Bake for 8-10 minutes or until golden brown.
