Ingredients

  • 1 pound smoked chicken breast, diced
  • 1 cup (2 sticks) unsalted butter
  • 1 cup all-purpose flour
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fettuccine pasta
  • 2 cloves garlic, minced
  • Fresh parsley, chopped (optional)

Instructions

Bring a large pot of salted water to a boil and cook the fettuccine pasta according to package instructions until al dente.

Reserve 1 cup of pasta water before draining.

In a large skillet, melt 2 tablespoons of butter over medium heat.

Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the diced smoked chicken breast to the skillet and cook until heated through, about 2-3 minutes.

Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 6 tablespoons of butter.

Once melted, sprinkle the all-purpose flour over the butter, whisking continuously for 1-2 minutes to make a roux.

Gradually pour in the heavy cream, whisking constantly to avoid lumps.

Bring the mixture to a simmer and cook for 2-3 minutes, until it thickens.

Remove the skillet from the heat and stir in the Parmesan cheese until melted and smooth.

Add the dried basil, dried oregano, salt, and black pepper.

Add the cooked fettuccine pasta to the skillet, tossing everything together until the pasta is well coated.

If the sauce seems too thick, add a little of the reserved pasta water.

Return the chicken to the skillet, tossing everything together until the chicken is fully coated in the sauce.

Serve immediately, garnished with chopped fresh parsley if desired.

Notes

Make sure to not overcook the fettuccine pasta, it should be al dente.

Reserve that pasta water, you never know when you might need it to thin out the sauce.

Use high-quality Parmesan cheese for the best flavor.

Don’t skip the step of whisking continuously when adding the flour and cream, you don’t want lumps in your sauce! If you want a lighter sauce, you can reduce the amount of butter and cream.

However, if you want a richer sauce, you can add more butter and cream.

Smoked chicken breast can be substituted with regular chicken breast if you can’t find smoked.

However, the smoky flavor does add depth to the dish.

This recipe makes 8 servings, so it’s perfect for a big family dinner or a dinner party.

You can also store leftovers in the fridge for up to 3 days or freeze for up to 2 months.

Reheat gently over low heat, whisking constantly, until warmed through.
