  • 1 pound large shrimp, peeled and deveined
  • 3 cups broccoli florets
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon grated ginger
  • Salt and pepper, to taste

Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the garlic and cook for 1 minute, until fragrant.

Add the broccoli to the skillet and cook for 3-4 minutes, until tender but still crisp.

Remove the broccoli from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil.

Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through.

Remove the shrimp from the skillet and set aside with the broccoli.

In a small bowl, whisk together the soy sauce, olive oil, and grated ginger.

Pour the sauce over the cooked shrimp and broccoli, and toss to coat.

Notes

Use fresh broccoli for the best flavor and texture. Frozen broccoli can be used too, just thaw it first.
