Selma’s Best Oatmeal Cookies

These oatmeal cookies are the perfect balance of chewy and crunchy, and they’re packed with flavor. Add in a little bit of chocolate or some dried fruit to make them your own.

Ingredients

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs, beaten
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups quick-cooking oats
  • ¾ cup chopped walnuts
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon

Instructions

In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. In a separate bowl, whisk together the flour, baking soda, and cinnamon. Gradually add to the butter mixture until everything is well blended. Stir in the oats and chopped walnuts or pecans. Cover and refrigerate for at least 1 hour (this will help prevent spreading).

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper. Drop dough by spoonfuls onto the prepared sheets; flatten slightly with a buttered glass dipped in sugar.

Bake for 10 minutes in preheated oven; cookies should be lightly golden around edges but still soft to touch in center when removed from oven (they will continue cooking on hot sheet pan). Allow cookies to cool on sheet pan for 5 minutes before transferring to wire racks to cool completely
