Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk, at room temperature

Instructions

Preheat your oven to 350°F (180°C). Grease a 9×13-inch baking dish and set it aside.

In a medium bowl, whisk together the flour, baking powder, and salt.

Set aside. In a large bowl, use an electric mixer to cream the butter and sugar until light and fluffy, about 2-3 minutes.

Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.

Beat in the vanilla extract. With the mixer on low speed, gradually add the flour mixture to the wet ingredients in three parts, alternating with the milk, beginning and ending with the flour mixture.

Beat just until combined.

Pour the batter into the prepared baking dish and smooth the top. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Let cool completely in the pan before slicing and serving.

Notes

Make sure to use room temperature ingredients, especially the milk and eggs, for a tender crumb. Don’t overmix the batter, especially when adding the flour mixture and milk, as this can result in a dense cake.

If you want a golden brown top, don’t open the oven door during the baking time.

For an extra moist cake, don’t overbake – the toothpick should come out clean but still be slightly tender in the center. You can store leftovers in an airtight container at room temperature for up to 3 days.
