Ricotta and Summer Berry Parfaits
I’m a sucker for anything with berries, and these parfaits are no exception. Layers of fluffy ricotta, sweet summer berries, and a hint of lemon make for a perfect summertime treat. And they’re so easy to make! Just layer everything in a jar and you’re good to go.
Ingredients
- 4 oz. cream cheese, softened
- 2 Tbsp. honey
- 2 tsp. lemon zest
- 2 Tbsp. lemon juice
- 1 tsp. vanilla
- 1 1/2 cups ricotta cheese
- 3 Tbsp. strawberry jam
Instructions
1. Combine cream cheese, honey, lemon zest, 1 Tbsp lemon juice and vanilla in a mixing bowl.
2. Beat with an electric mixer for 1-2 minutes on medium speed until light and fluffy.
3. Beat in ricotta until smooth.
4. Use a spatula to push the jam through a fine mesh strainer into a small mixing bowl; this will remove any tiny seeds in the jam.
5. Add remaining 1 Tbsp of lemon juice to strained jam and mix until smooth; add berries and stir to coat them well..
6. Into four dessert glasses or bowls, layer 1-2 Tbsp berries and 2-3 Tbsp ricotta mixture; repeat process ending with berries on top as final layer..
7(optional). Sprinkle with chopped pistachios and garnish with mint leaves prior to serving if desired
