Ramen Noodle Frittata

Ingredients

  • 8 large eggs
  • 1/2 cup diced cooked chicken breast
  • 1/2 cup diced cooked bacon
  • 1 cup cooked Ramen noodles
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced green onions
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • Salt and pepper to taste

Instructions

Preheat your oven to 375°F (190°C). In a large mixing bowl, whisk together those eggs, adding a pinch of salt and pepper to taste.

In a large skillet, heat the sesame oil over medium-high heat.

Add the diced chicken breast and cooked bacon; stir-fry until everything is nicely coated and heated through. Remove from heat and set aside.

In the same skillet, add the cooked Ramen noodles and stir-fry for about 2-3 minutes, until they’re lightly toasted.

Set aside with the chicken and bacon mixture. In the same mixing bowl, add the cooked Ramen noodles, chicken, and bacon mixture to the eggs.

Stir until everything is well combined.

Pour the egg mixture into a greased 10-inch skillet or oven-safe pan. Sprinkle the shredded cheddar cheese and diced green onions on top.

Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the frittata is puffed and the eggs are set.

Remove from the oven and let it cool for a few minutes before slicing into 7 equal pieces. Serve warm and drizzle with soy sauce to taste.

Notes

Use leftover cooked chicken breast and bacon to make this recipe more convenient. Make sure to grease the skillet well to prevent the frittata from sticking.

If you want a crisper crust on your frittata, broil it for an additional 1-2 minutes after baking.

Ramen noodles can be substituted with other types of noodles if you prefer. For a spicy kick, add some diced jalapenos or red pepper flakes to the egg mixture.

You can also customize the recipe by adding other ingredients, such as diced bell peppers or mushrooms, to the egg mixture.
