Peanut Butter and Bran Cookies
These cookies are a great way to get your daily dose of fiber! The peanut butter and bran combination makes for a delicious and healthy snack.
Ingredients
- 1 cup butter, melted
- ¾ cup packed brown sugar
- ¾ cup white sugar
- 1 teaspoon vanilla extract
- 1 cup peanut butter
- 2 eggs, beaten
- 1 ¼ cups all-purpose flour
- 1 cup wheat bran
- ¾ cup rolled oats
- 2 teaspoons baking soda
Instructions
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a bowl, beat together the butter, brown sugar, white sugar, vanilla extract, peanut butter and eggs.
3. In a separate bowl mix the flour, bran oats and baking soda. Stir until smooth
4. Drop by rounded teaspoons onto an ungreased cookie sheet. Bake for 15-18 minutes
5.. Remove and let cool
