Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 cup wheat bran
- 1/2 cup peanut butter (creamy or crunchy)
- 1/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: chopped peanuts or chocolate chips for added flavor and texture
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, bran, baking soda, and salt.
Set aside.
In a large bowl, use an electric mixer to cream together the peanut butter and butter until smooth and creamy. Gradually add the granulated sugar and brown sugar, beating until well combined.
Beat in the egg and vanilla extract until smooth.
Gradually mix in the flour mixture until just combined, being careful not to overmix. If using, fold in chopped peanuts or chocolate chips.
Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
Bake for 10-12 minutes or until the edges are lightly golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Yield: 9 cookies.
Notes
Use creamy or crunchy peanut butter, whichever you prefer! If you want an extra crunchy cookie, try adding chopped peanuts. If you’re a chocolate lover, throw in some chocolate chips for an added treat.
These cookies freeze well, so feel free to wrap individually and store in an airtight container for up to 2 months.
Perfect for a quick snack or lunchbox addition. You can also use old-fashioned oats instead of wheat bran if you don’t have bran on hand.
