Yields
7 servings
Ingredients
- 1 1/2 cups fresh peaches, sliced
- 1 cup vanilla yogurt
- 7 tablespoons granola
- 7 tablespoons honey
- 1 cup vanilla ice cream
- 1 cup fresh raspberries
- 1/4 cup raspberry sauce
Instructions
Start by preparing the peaches – Wash and dry the fresh peaches, then slice them into thin wedges.
You’ll need about 1 1/2 cups of sliced peaches.
In a separate bowl, scoop out 1 cup of vanilla yogurt and set it aside for later use.
Next, grab your granola and honey.
You’ll need 7 tablespoons of each, so measure them out and set them aside with the yogurt.
Now it’s time to assemble the parfaits.
Start by spooning a layer of vanilla ice cream into the bottom of a glass or parfait dish.
You’ll want to use about 1/7 of the cup of ice cream for each serving.
Add a layer of sliced peaches on top of the ice cream, followed by a spoonful of vanilla yogurt.
Sprinkle a tablespoon or two of granola over the yogurt, then drizzle with a tablespoon of honey.
Next, add a layer of fresh raspberries – about 1/7 of the cup per serving.
Finally, drizzle the top of each parfait with a spoonful of raspberry sauce – about 1/4 of the cup divided among the 7 servings.
Repeat the layers one more time, ending with a layer of ice cream on top.
You can get creative with the layers and make them as tall or as short as you like! Serve chilled and immediately, garnished with additional fresh raspberries and a sprinkle of granola if desired.
Notes
Use fresh, ripe peaches for the best flavor and texture.
If peaches aren’t in season, you can substitute with canned peaches in syrup, but be sure to rinse them with water first.
Customize the amount of honey and granola to your taste – if you prefer a less sweet parfait, start with 5 tablespoons of honey and add more to taste.
You can make the raspberry sauce from scratch using fresh raspberries and a little sugar, or use store-bought sauce for convenience.
Feel free to swap out the vanilla ice cream for a different flavor, like strawberry or peach, to mix things up.
Just be sure it’s a flavor that complements the peaches and raspberries! Assemble the parfaits just before serving, as the honey and granola can get soggy if left to sit for too long.
You can prepare the peaches, yogurt, and granola ahead of time, though! Consider using a clear glass or parfait dish to show off the colorful layers.
It makes for a beautiful presentation! These parfaits are perfect for a summer dinner party or brunch – just be sure to keep them chilled until serving time.
