Mrs Siggs Peanut Butter Cookies
These classic peanut butter cookies, courtesy of Mrs.
Siggs, are a staple for a reason.
Soft, chewy, and packed with peanut butter flavor, they’re a treat that’s both comforting and indulgent.
With a crispy edge and a crunchy center (thanks to optional chopped peanuts), they’re the perfect sweet escape.

Ingredients
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup peanut butter (creamy or crunchy, whichever you prefer)
- 1/2 cup unsalted butter, softened
- 1/2 cup white granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- Optional: 1 cup chopped peanuts for added crunch
Instructions
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper or a silicone mat to make cleanup a breeze.
In a medium-sized bowl, whisk together the baking soda and salt.
Set it aside for now.
In a large bowl, use an electric mixer to cream together the peanut butter and butter until smooth and fluffy.
Add the white granulated sugar and beat until well combined.
Beat in the egg and vanilla extract until smooth.
Gradually mix in the flour mixture from the medium bowl until a dough forms.
If you’re feeling extra crunchy, stir in those chopped peanuts! Scoop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
Bake for 10-12 minutes or until the edges are lightly golden.
Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Yield: 7 delicious cookies!
Notes
Make sure to use room-temperature butter for the best results – it’ll help the peanut butter and butter cream together smoothly.
If you’re using crunchy peanut butter, you might not need the optional chopped peanuts, but hey, extra crunch is always fun! For an extra chewy center, bake for 9-10 minutes; for a crisper cookie, go for the full 12 minutes.
Don’t overmix the dough, or you’ll end up with tough cookies.
If you want a more prominent peanut flavor, use natural peanut butter instead of processed.
And don’t forget to store these bad boys in an airtight container to keep ’em fresh for up to 5 days!
