Yields

10 servings

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup olive oil
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Rinse the shrimp under cold water, pat them dry with paper towels to remove excess moisture. In a blender or food processor, combine olive oil, lime juice, cilantro, garlic, cumin, smoked paprika (if using), salt, and black pepper.

Blend until smooth.

Place the shrimp in a large bowl or zip-top plastic bag. Pour the marinade over the shrimp and toss to coat evenly.

Cover the bowl with plastic wrap or seal the bag, and refrigerate for at least 30 minutes or up to 2 hours.

Preheat a grill or grill pan to medium-high heat. Remove the shrimp from the marinade, letting any excess liquid drip off.

Grill the shrimp for 2-3 minutes per side, or until they’re pink and cooked through.

Serve hot and enjoy with your favorite sides!

Notes

Make sure to peel and devein the shrimp before starting the recipe, it will save you time in the long run! You can also prep the marinade ahead of time, store it in the fridge for up to 24 hours.

You can adjust the amount of garlic to your taste, and if you don’t have smoked paprika, feel free to omit it or substitute with regular paprika.

If using a grill pan, make sure it’s hot before adding the shrimp, you should see a slight sear on them.

Don’t overcook the shrimp, they should be pink and firm to the touch, 2-3 minutes per side is just a guideline, adjust according to your grill’s heat.
