  • For the roasted vegetables:

  • * 2 large yellow onions, chopped
  • * 2 large sweet potatoes, peeled and chopped
  • * 2 tablespoons olive oil

Instructions

Preheat your oven to 400°F (200°C). In a small bowl, whisk together miso paste, soy sauce, brown sugar, rice vinegar, olive oil, garlic, ginger, black pepper, and salt to taste to make the glaze.

Place the salmon fillets in a shallow dish and brush the miso glaze evenly over both sides of the salmon.

Line a baking sheet with parchment paper and arrange the salmon fillets on it, leaving some space between each fillet. Roast the salmon in the preheated oven for 12-15 minutes or until cooked through, depending on desired doneness.

Meanwhile, prepare the roasted vegetables.

In a large bowl, toss together chopped carrots, Brussels sprouts, red bell peppers, yellow onions, and sweet potatoes. Drizzle the olive oil over the vegetables and sprinkle with salt and pepper to taste.

Toss to coat evenly.

Spread the vegetables out in a single layer on two separate baking sheets lined with parchment paper. Roast the vegetables in the oven for 20-25 minutes or until tender, stirring occasionally.

Make sure to pat the salmon fillets dry with a paper towel before applying the miso glaze to ensure it adheres evenly.
