Lane Cake Filling

This recipe is for the Lane Cake filling, a classic Southern dessert. The cake is named after Emma Rylander Lane, who published the first known recipe for it in 1898. The cake consists of a white sponge cake layered with a bourbon-infused custard filling, and it is typically decorated with pecans or walnuts.

Ingredients

  • 1/2 cup butter, softened

  • 8 egg yolks
  • 1/2 cup water
  • 1 teaspoon brandy flavoring
  • 1 cup chopped pecans
  • 1 cup raisins, chopped
  • 1/2 cup candied cherries, chopped

2. Add in the egg yolks and beat everything well again.

3. Stir in the water and brandy flavoring, then place the double boiler over boiling water.

4. Cook and stir until thickened – this will take around 20 minutes or so.

6 . Remove from heat and allow filling to cool before using it for your cake!
