Jam Tarts
Sweet treats await! These adorable jam tarts are a delightful combination of flaky pastry, sweet jam, and a touch of elegance. With just a few simple ingredients, you can create a batch of these tasty treats that are perfect for a snack, dessert, or even a charming gift.

Ingredients
- 200g all-purpose flour
- 100g cold unsalted butter, diced
- 50g confectioners’ sugar
- 1/4 teaspoon salt
- 1 large egg, beaten
- 1 tablespoon milk
- 1 teaspoon white vinegar
- 250g jam of your choice (such as raspberry, strawberry, or apricot)
- 1 egg, beaten (for egg wash)
- Confectioners’ sugar (for dusting)
Instructions
In a large mixing bowl, combine the flour, confectioners’ sugar, and salt. Add the diced butter and use your fingers or a pastry blender to work it into the flour mixture until it resembles coarse crumbs.
In a small bowl, whisk together the beaten egg, milk, and vinegar.
Add this mixture to the flour mixture and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch.
Use a cookie cutter or the rim of a glass to cut out circles of dough. You should be able to get about 10 circles.
Spoon a small amount of jam onto one half of each circle, leaving a 1/2 inch border around the edges.
Fold the other half of the dough circle over the jam to form a triangle or a square shape, pressing the edges together to seal. Use a fork to crimp the edges of each tart.
Brush the tops with the beaten egg for a glaze.
Place the tarts on a baking sheet lined with parchment paper, leaving about 1 inch of space between each tart. Bake in a preheated oven at 375°F for 20-25 minutes, or until the tarts are golden brown.
Allow the tarts to cool on a wire rack before dusting with confectioners’ sugar.
Serve warm or at room temperature.
Notes
For a flakier crust, make sure to keep the butter cold and handle the dough gently.
Don’t overmix the dough, as this can lead to a tough tart crust.
If you find the dough too sticky, you can add a little more flour.
If it’s too dry, add a little more milk.
To get a more golden glaze, make sure to brush the tops of the tarts generously with the beaten egg.
You can use any flavor jam you like, but raspberry and strawberry work particularly well.
These tarts freeze beautifully, so you can make a batch and store them in an airtight container for up to 2 months.
Simply thaw at room temperature or reheat in the oven when you’re ready to serve.
Remember to adjust your baking time if you’re using a dark baking sheet, as it can affect the cooking time.
You can also get creative with the shape of your tarts – try using different cookie cutters or making your own shapes with a knife.
