Grilled Boudin

Ingredients
- 1 pound boudin sausage, sliced into 1-inch thick rounds
- 5 hamburger buns
- 1 large onion, sliced
- 2 large bell peppers, sliced
- 2 large zucchinis, sliced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 5 slices of pepper jack cheese (optional)
Instructions
Preheat your grill to medium-high heat.
In a large bowl, whisk together olive oil, smoked paprika, garlic powder, salt, and pepper to make a marinade.
Add the sliced onions, bell peppers, and zucchinis to the bowl and toss to coat.
Let the vegetables marinate for at least 15 minutes.
While the vegetables are marinating, slice the boudin sausage into 1-inch thick rounds.
Place the sausage slices on a large plate or tray.
Grill the marinated vegetables for 5-7 minutes per side, or until they’re tender and lightly charred.
Grill the boudin sausage slices for 3-5 minutes per side, or until they’re nicely browned and cooked through.
Meanwhile, toast the hamburger buns by grilling them for 1-2 minutes per side, or until lightly toasted.
Assemble the grilled boudin by placing a few slices of the sausage on each bun, followed by a few slices of the grilled vegetables.
If using pepper jack cheese, place a slice on top of the sausage.
Serve immediately and enjoy!

Grilled Boudin is a hearty and flavorful dish that’s perfect for a backyard barbecue or picnic.
You can adjust the amount of vegetables and seasonings to your taste, so don’t be afraid to get creative! If you can’t find boudin sausage, you can substitute it with another smoked sausage.
