Ingredients

  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) light corn syrup
  • 1/2 cup (120ml) water
  • 1 tablespoon unflavored gelatin
  • Food coloring (optional)
  • Flavorings (optional)

Instructions

Combine the sugar, corn syrup, and water in a medium saucepan and place it on medium heat, stirring occasionally, until the sugar has dissolved.

Increase the heat to medium-high and bring the mixture to a boil.

Use a candy thermometer to monitor the temperature.

Once the mixture reaches 300°F (hard-ball stage), remove it from the heat.

Let it cool slightly.

In a small bowl, sprinkle the gelatin over 1/4 cup of cold water and let it sit for about 2 minutes until it becomes soft and pliable.

Add the softened gelatin to the warm sugar mixture, stirring until it’s fully dissolved.

If desired, add a few drops of food coloring or flavorings to the mixture and stir well to combine.

Pour the mixture into a greased 8-inch square baking dish.

Let it cool and set at room temperature for about 30-40 minutes, or until it has reached a firm, jelly-like consistency.

Remove the mixture from the baking dish and use a sharp knife or cookie cutter to cut it into desired shapes.

You should be able to get about 7 cubes.

If you’re new to candy making, it’s essential to invest in a good candy thermometer, as it’s the most accurate way to measure the temperature of the sugar mixture.

Make sure to not stir the mixture too vigorously, as it can cause air bubbles to form, which can affect the texture of your Eskimo Cubes.
