Easy Tootsie Rolls

Ingredients
- 2 cups powdered sugar
- 1/2 cup light corn syrup
- 1/2 cup sweetened condensed milk
- 1 tablespoon unflavored gelatin
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans (optional)
Instructions
Line a surface with parchment paper or a silicone mat.
In a small bowl, sprinkle the gelatin over 1/4 cup of water and let it sit for 5 minutes to soften.
In a medium saucepan, combine the powdered sugar, corn syrup, and sweetened condensed milk.
Place the saucepan over medium heat and cook, stirring occasionally, until the sugar has dissolved.
Bring the mixture to a boil, then reduce the heat to medium-low and simmer for 10 minutes, or until the mixture reaches 300°F on a candy thermometer.
Remove the saucepan from the heat and stir in the softened gelatin, vanilla extract, and chopped pecans (if using).
Let the mixture cool slightly, until it reaches 275°F.
Pour the mixture onto the prepared surface and let it cool and set at room temperature for at least 30 minutes.
Once set, use a sharp knife or cookie cutter to cut the mixture into desired shapes.
You should end up with around 7 Tootsie Roll-like candies.
Notes
To get the right consistency, make sure to not overmix the gelatin while it’s softening, and also when you’re combining it with the sugar mixture.
If you don’t have a candy thermometer, you can test the mixture by dropping a small amount of it into a cup of cold water – if it forms a soft ball that flattens when removed from the water, it’s ready.
If it doesn’t form a ball, continue cooking the mixture and testing it until it reaches the correct consistency.
Chopping the pecans finely will help them distribute more evenly throughout the candy.
If you want a chewier candy, you can remove the mixture from the heat at 290°F, and if you prefer a firmer candy, you can cook it to 305°F.
Keep an eye on the temperature, as it can quickly go from perfect to burnt.
