Easy Keto Cheese Crackers

Ingredients

  • 1 cup almond flour
  • 1/2 cup grated cheddar cheese
  • 1/4 cup coconut flour
  • 1/4 cup granulated sweetener
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon black pepper
  • 2 tablespoons cold unsalted butter, cut into small pieces
  • 1 large egg

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, combine almond flour, grated cheddar cheese, coconut flour, granulated sweetener, salt, baking soda, and black pepper.

Mix well until a crumbly mixture forms.

Add in the cold unsalted butter and use a pastry blender or your fingers to work it into the dry ingredients until they resemble coarse crumbs. In a small bowl, whisk the large egg until it’s well beaten, then add it to the dry mixture.

Mix until a dough forms.

Wrap the dough in plastic wrap and chill in the refrigerator for 10 minutes. On a lightly floured surface, roll out the dough to about 1/4 inch thickness.

Cut the dough into desired shapes using a cookie cutter or a glass.

You can also simply cut the dough into squares or strips. Place the shapes on the prepared baking sheet, leaving about 1 inch of space between each cracker.

Bake for 12-15 minutes or until the edges are lightly golden.

Remove the crackers from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Be gentle when mixing the dough, as you want to maintain the crumbly texture. If the dough is too crumbly, add a little more egg.

If it’s too sticky, add a little more almond flour.

Make sure to chill the dough to help the cheese set and the dough to firm up, making it easier to roll out. Use a variety of cookie cutters to create fun shapes, or keep it simple with squares or strips.

You can also use a glass to cut out circles.

Keep an eye on the crackers while they’re baking, as they can go from perfectly golden to burnt quickly. These crackers are perfect for snacking on their own or paired with your favorite cheeses, meats, and spreads.

You can store them in an airtight container for up to 3 days.
