Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large onion, sliced
  • 2 large bell peppers (any color), sliced
  • 8 small flour tortillas
  • Optional toppings: avocado, sour cream, shredded cheese, cilantro

Instructions

Preheat your grill to medium-high heat. In a large bowl, whisk together lime juice, olive oil, garlic, cumin, smoked paprika, salt, and pepper.

Add the shrimp and marinate for at least 15 minutes, or up to 30 minutes in the refrigerator.

Remove the shrimp from the marinade and thread them onto skewers, if using. Grill the shrimp for 2-3 minutes per side, or until they’re pink and cooked through.

While the shrimp are cooking, grill the sliced onion and bell peppers for 3-4 minutes per side, or until they’re tender and lightly charred.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. Assemble the fajitas by placing a portion of the grilled shrimp, onion, and bell peppers onto each tortilla.

Add your desired toppings, such as avocado, sour cream, shredded cheese, and cilantro.

Serve immediately and enjoy!

Notes

For a quick and easy marinade, use a zip-top plastic bag or a shallow dish, and make sure to coat the shrimp evenly. If you’re using wooden skewers, be sure to soak them in water for at least 30 minutes before grilling to prevent them from burning.

Don’t overcrowd the grill, cook the shrimp and veggies in batches if necessary.

This will ensure they cook evenly and prevent them from steaming instead of grilling. If you prefer a bit of char on your veggies, grill them for an additional minute or until they reach your desired level of doneness.

Warm tortillas can make all the difference, so don’t skip this step! You can also grill the tortillas for a few seconds on each side to give them a nice char.
