Crispy Butterscotch Cookies

These cookies are chewy and full of flavor. The butterscotch chips give them a crispy texture that is perfect for any occasion.


  • 1 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 cups crisp rice cereal
  • 1 cup butterscotch chips


In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract and beat until well blended. Add the flour, salt, and baking soda to the mixture and mix until well combined. Stir in the crisp rice cereal and butterscotch chips.

Drop by heaping tablespoons onto a greased cookie sheet. Bake at 350 degrees Fahrenheit for 12-15 minutes, or until lightly browned around the edges. Remove cookies from oven to cool on racks before serving.
