Creamy Chicken Soup

This creamy chicken soup is one of my all-time favorite recipes. It’s perfect for a winter day, and it’s so easy to make. The best part is that it’s really healthy too!

Ingredients

  • 2 Tbsp olive oil, 6 large carrots (diced), 4 stalks celery (diced), 4 cloves garlic (minced), 1/2 large onion (diced), 1 tsp kosher salt, 1/4 tsp black pepper, 2 tsp dried thyme, 1 bay leaf, 8 cups chicken stock, 4 bone-in chicken thighs (about 1.5lbs), 8oz egg noodles, 2 cans cannellini beans (14oz each), 2 tsp apple cider vinegar, 1/2 cup heavy cream, 2 Tbsp chopped parsley

Instructions

1. Heat olive oil in a stock pot or Dutch oven set over medium heat. Add the vegetables, garlic, salt, pepper, thyme and bay leaf. Stir only 2 or 3 times then let it sit for 10 minutes.

2. Stir the veggies every 1 to 2 minutes for the next 6 minutes until you notice some color developing on the vegetables; you want them to brown a bit but not too much.

3. Add chicken stock and scrape any fond that has developed on the bottom of pan. Bring to boil then reduce heat to medium to simmer.

4a. If thighs have skin: remove it and trim them of any excess fat; add thighs to soup and let cook uncovered for 20 minutes; if any foam forms on surface just skim it off.

4b. Check chicken is cooked through (160°F); if not, cook an additional 5 minutesthen use tongs transfer to cutting board and cool before removing meat from bones

5a In meantime: in a medium sized bowl add drained beans 1/2 cup water and apple cider vinegar; puree using an immersion blender (or food processor or countertop blender)

6a Reheat: add meat back into pot stir in bean puree
