  • 1 cup fresh corn kernels
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced yellow onion

  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 chipotle pepper in adobo sauce, minced

Instructions

Preheat your oven to 400°F (200°C). Place the corn kernels on a baking sheet and roast for about 20-25 minutes, or until lightly toasted.

Let it cool completely.
