Ingredients
- Butter, softened 1/2 cup
- Granulated sugar 1/2 cup
- Large eggs 1
- All-purpose flour 1 1/2 cups
- Baking powder 1 teaspoon
- Salt 1/4 teaspoon
- Pure vanilla extract 1/2 teaspoon
- Colored sugar or sprinkles for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C). Line your ceramic molds with parchment paper or lightly grease them with butter, making sure to get into all the nooks and crannies.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
Beat in the large egg until well combined. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Stir in the pure vanilla extract. Divide the dough into 6 equal pieces, depending on the size of your ceramic molds.
Shape each piece into a ball and then flatten slightly into a disk shape.
Place each disk into a prepared ceramic mold, pressing the dough into the mold to fit snugly. Bake for 15-20 minutes or until the edges are lightly golden brown.
Let the cookies cool in the molds for 5 minutes before transferring them to a wire rack to cool completely.
If desired, sprinkle with colored sugar or sprinkles before serving.
Notes
Make sure to adjust the baking time based on the size of your ceramic molds, as smaller molds will bake faster. Use high-quality butter for the best flavor and texture.
If you want a crisper cookie, bake for 18-20 minutes.
If you prefer a chewier cookie, bake for 12-15 minutes. To ensure the cookies release easily from the molds, make sure to grease them thoroughly or use parchment paper.
Colored sugar or sprinkles add a nice touch to the cookies, but feel free to get creative with your garnish choices! If you’re unsure if the cookies are done, check for lightly golden brown edges and a firm texture.
