  • 1 pound dark chocolate chips, 1/2 cup instant coffee granules, 1 cup unsalted butter, softened, 2 cups brown sugar, 8 eggs, 3 tablespoons vanilla extract, 1 teaspoon ground cinnamon, 1 teaspoon salt, 2 cups whole wheat flour


1. Preheat oven to 375 degrees F (190 degrees C). Grease and flour four 8×8-inch baking pans.

2. Place the chocolate chips and the coffee granules in a double boiler over simmering water. Cook over medium heat, stirring occasionally, until melted and smooth. Set aside.

3. In a large bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs two at a time, mixing well after each addition. Stir in vanilla, cinnamon, and salt, then mix in the melted chocolate mixture from before slowly until just blended evenly throughoutthe batter..

4. Divide batter equally into prepared pans, spreading smooth with spatula or back of spoon if needed,. Bake for 35 minutes in preheated oven,, or until edges pull away slightly from sides of pan.. Allow to wire rack to cool completely.. Cover ,and refrigerate for 8 hours minimum but overnight is better.. Cut cold brownies into bars using serrated knife sawing back forth gently being extra careful not to crumble them as you cutif needed they can be reheated prior to serving if desired though most people enjoy them at room temperature or cooler straight from fridge .
