Instructions
In a blender or food processor, blend olive oil, lemon juice, garlic, Dijon mustard, smoked paprika, salt, and black pepper until smooth. In a large bowl, combine the blended marinade, parsley, cilantro, and grated ginger (if using).
Stir well to combine.
Add the shrimp to the marinade and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
Preheat a grill or grill pan over medium-high heat.
Remove the shrimp from the marinade, letting any excess liquid drip off. Grill the shrimp for 2-3 minutes per side, or until they are pink and cooked through.
