  • about 10-12 ounces white chocolate chips or chopped white chocolate

Instructions

Line a baking sheet with parchment paper or a silicone mat.

In a large mixing bowl, combine the peanut butter, softened butter, confectioners’ sugar, vanilla extract, and salt.

Mix until smooth and creamy.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

Scoop out small balls of the peanut butter mixture, about 1 inch in diameter.

Place the semisweet chocolate chips in a separate bowl.

Melt the chocolate chips in the microwave in 30-second increments, stirring between each interval, until smooth.

Dip the end of a toothpick into the melted chocolate and insert it into a peanut butter ball, about halfway through.

Dip the peanut butter ball into the melted chocolate, coating about 3/4 of it, leaving a small circle of peanut butter visible.

Place the buckeye on the prepared baking sheet.

Repeat the process with the remaining peanut butter balls.

Place the baking sheet in the refrigerator to set the chocolate for at least 30 minutes.

Once set, melt the white chocolate chips in a microwave-safe bowl in 30-second increments, stirring between each interval, until smooth.

Drizzle the melted white chocolate over the buckeyes.

If desired, sprinkle with chopped nuts or sprinkles before the white chocolate hardens.

Refrigerate for an additional 10-15 minutes to set the white chocolate.

Serve chilled.
