Ready Time

40 mins

Yields

10 servings

Ingredients

  • 20-25 bone-in, skin-on chicken thighs
  • 5 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional)

Instructions

Preheat your broiler.

In a large bowl, whisk together olive oil, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper (if using).

Add the chicken thighs to the bowl and toss to coat them evenly with the marinade.

Make sure they’re fully coated, then cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

Remove the chicken from the refrigerator and let it sit at room temperature for 30 minutes before broiling.

Line a rimmed baking sheet with aluminum foil and spray it with cooking spray.

Arrange the chicken thighs on the prepared baking sheet in a single layer, leaving some space between each piece.

Broil the chicken for 5-7 minutes per side, or until the skin is crispy and golden brown and the internal temperature reaches 165°F.

Remove the chicken from the oven and let it rest for 5 minutes before serving.

Serve hot, garnished with your favorite sides or salad.

Notes

Make sure to pat the chicken thighs dry with paper towels before tossing them with the marinade to help the seasonings stick better. If using cayenne pepper, adjust the amount to your desired level of heat.

For crisper skin, pat the chicken dry with paper towels again before broiling.

If you’re short on time, you can marinate the chicken for at least 30 minutes, but the longer the better! To ensure even cooking, try to have all the chicken thighs roughly the same size. If you don’t have a broiler, you can also bake the chicken in a preheated oven at 400°F (200°C) for about 25-30 minutes, or until cooked through.
