Blueberry Lemon Greek Yogurt Parfait

Ingredients
- 1 1/2 cups rolled oats
- 1 cup fresh or frozen blueberries
- 1/2 cup granulated sugar
- 2 tablespoons freshly squeezed lemon juice
- 1/4 teaspoon kosher salt
- 2 cups Greek yogurt
- 1/4 cup unsalted butter, softened
- 1/2 teaspoon vanilla extract
- 1/4 cup confectioners’ sugar
- 6 cups mixed greens, for garnish
- 1 cup fresh blueberries, for garnish
- 1/4 cup lemon zest, for garnish
- 1/4 cup crushed pecans or walnuts, for garnish
Instructions
Start by preparing your granola topping.
In a medium-sized bowl, mix together the rolled oats, granulated sugar, and kosher salt until well combined.
Add in the softened butter and mix until crumbly.
Spread the mixture onto a baking sheet and bake in a preheated oven at 350°F for 10-12 minutes, or until lightly golden brown.
Stir every 5 minutes to ensure even cooking.
While the granola is baking, prepare your lemon syrup.
In a small bowl, whisk together the freshly squeezed lemon juice and confectioners’ sugar until the sugar is fully dissolved.
In a large bowl, whisk together the Greek yogurt and vanilla extract until smooth.
To assemble the parfaits, divide the yogurt mixture evenly among six glasses or parfait dishes.
Top the yogurt with a spoonful of fresh or frozen blueberries, followed by a sprinkle of the baked granola topping and a drizzle of the lemon syrup.
Garnish each parfait with a handful of mixed greens, a few fresh blueberries, a sprinkle of lemon zest, and a pinch of crushed nuts.
Serve immediately and refrigerate any leftovers for up to 24 hours.
Notes
Make sure to adjust the amount of sugar to your taste, especially if using frozen blueberries which can be sweeter than fresh ones. For an extra crunchy granola topping, bake the mixture for the full 12 minutes, but keep an eye on it to prevent burning.
If you want a stronger lemon flavor, you can increase the amount of lemon juice in the syrup or add some lemon zest to the yogurt mixture for an extra boost.
To make ahead, prepare the granola topping and lemon syrup up to 24 hours in advance, but assemble the parfaits just before serving for the best flavor and texture. Feel free to customize the toppings to your liking – some other options include shaved dark chocolate, diced fresh peaches, or even a sprinkle of cinnamon.
Greek yogurt can be substituted with regular yogurt, but keep in mind that the texture and flavor may not be as rich and creamy.
If you’re using frozen blueberries, thaw them first and pat dry with a paper towel to remove excess moisture before using.
