Yields

6 servings

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 3/4 cup whole milk
  • 2 large eggs
  • 1 pound sweet or hot sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried sage
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 cups frozen biscuits, thawed
  • 1 cup shredded cheddar cheese

Instructions

Preheat your oven to 375°F (190°C). In a medium bowl, whisk together the flour, salt, and baking powder.

Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.

In a large skillet, cook the sausage over medium-high heat, breaking it up with a spoon, until browned, about 5-7 minutes. Remove from heat and set aside.

In the same skillet, add the diced onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for an additional minute. In a small bowl, whisk together the flour, chicken broth, and heavy cream until smooth.

Add the dried sage, black pepper, and salt.

Stir until combined. Add the flour mixture to the skillet and bring to a boil.

Reduce heat to medium-low and simmer for 2-3 minutes, or until the gravy thickens.

In a large bowl, whisk together the whole milk, eggs, and a pinch of salt. Grease a 9×13-inch baking dish with butter or cooking spray.

Arrange half of the biscuits in the prepared dish.

Top with the cooked sausage, then pour the gravy mixture over the sausage. Sprinkle half of the shredded cheddar cheese over the gravy.

Repeat the layers, starting with the remaining biscuits, then the remaining cheese.

Bake for 35-40 minutes, or until the biscuits are golden brown and the casserole is hot and bubbly. Serve hot and enjoy!

Notes

Use cold ingredients, including cold butter and cold milk, for the fluffiest biscuits. Don’t overmix the biscuit dough, stop once the butter is broken down into coarse crumbs.

Use sweet or hot sausage, whichever you prefer, or a combination of both for a spicy kick.

Don’t overcook the sausage, it should be browned but still juicy. Use frozen biscuits to save time, just thaw them according to package instructions.

If using leftover sausage, make sure it’s reheated before assembling the casserole.

You can prepare the gravy mixture ahead of time, refrigerate or freeze it until ready to assemble the casserole. This casserole is perfect for breakfast, brunch, or even dinner!
