  • butter, softened 140g
  • granulated sugar 150g
  • large eggs 3
  • all-purpose flour 180g
  • baking powder 5g
  • salt 2g
  • whole milk, at room temperature 120ml
  • pure vanilla extract 5ml

Instructions

Preheat your oven to 350°F (175°C) and grease two 7-inch (18cm) round cake pans.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the large eggs one at a time, making sure each egg is fully incorporated before adding the next.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, alternating with the whole milk, beginning and ending with the dry ingredients.

Beat just until combined.

Stir in the pure vanilla extract.

Divide the batter evenly between the prepared pans and smooth the tops.

Bake for 25-30 minutes or until a toothpick inserted into the center of each cake comes out clean.

Remove the cakes from the oven and let them cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Use room temperature ingredients for a lighter texture. Don’t overbeat the mixture, especially when adding eggs, to prevent a dense cake.

Don’t overmix the dry ingredients into the butter mixture, stop once just combined.

If you don’t have 7-inch pans, you can use two 8-inch pans or one 9×13-inch pan, adjusting baking time as needed. For an even bake, rotate the pans halfway through the baking time.
