Ingredients

  • 1 (.25 ounce) package unflavored gelatin,
  • 1/4 cup cold water,
  • 1 1/2 cups dried apricots, chopped,
  • 2 tablespoons lemon juice,
  • 1 cup confectioners’ sugar,
  • 1/4 teaspoon salt,
  • 1 cup heavy cream (whipped).

Instructions

1. Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9×13 inch baking pan.

2. In a small bowl, stir together gelatin and cold water. Let stand for 1 minute to soften.

3. In a large bowl, combine apricots, lemon juice, sugar, salt, and gelatin mixture. Stir well to coat apricots with sugar mixture.

4. Pour apricot mixture into the prepared pan. Bake for 11 minutes, or until top is bubbly and edges are beginning to brown slightly.
