Asian Slaw

This Asian Slaw is a flavorful and refreshing side dish that’s perfect for accompanying your favorite Asian-inspired dishes. With a colorful medley of thinly sliced red cabbage, carrots, and red bell pepper, this crunchy slaw gets a boost of flavor from a zesty soy sauce-based dressing and a sprinkle of fresh cilantro.

Ingredients

  • 1 cup thinly sliced red cabbage
  • 1/2 cup thinly sliced carrots
  • 1/2 cup thinly sliced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Instructions

In a large bowl, combine the sliced red cabbage, carrots, and red bell pepper. In a small bowl, whisk together the soy sauce, rice vinegar, honey, grated ginger, salt, and pepper until well combined.

Pour the soy sauce mixture over the cabbage mixture and toss to coat.

Sprinkle the chopped cilantro over the top and toss again to combine. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Just before serving, give the slaw a good stir and adjust the seasoning if needed.

Serve chilled, dividing the slaw among four plates or using as a topping for your favorite Asian-inspired dishes.

Notes

Make sure to slice your veggies thinly so they’re all similar in size, making the slaw easier to mix and prettier to serve.

Don’t skip the 30-minute refrigeration time – it’s essential for the flavors to meld together and the slaw to come together.

Taste and adjust the seasoning right before serving, as the flavors might have shifted a bit while it was refrigerated.
