  • 1 1/2 sticks unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs

  • 1 cup chopped fresh apple (about 1 medium apple)
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

Preheat your oven to 350°F (180°C).

Line a 9×5-inch loaf pan with parchment paper or aluminum foil, leaving some overhang on the sides for easy removal.

In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.

Beat in the eggs one at a time, making sure each egg is fully incorporated before adding the next.

Beat in the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Do not overmix.

Fold in the chopped apple and walnuts (if using).

In a small bowl, mix together the brown sugar, cinnamon, and nutmeg.

Add this mixture to the batter and fold until well combined.

Pour the batter into the prepared loaf pan and smooth the top.
