  • 10 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 cups breadcrumbs
  • 2 cups grated mozzarella cheese
  • 1 cup chopped fresh spinach
  • 1/2 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/2 cup cream cheese, softened
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup chopped artichoke hearts

Instructions

Preheat your air fryer to 375°F (190°C). In a small bowl, mix together olive oil, salt, black pepper, garlic powder, paprika, oregano, and thyme.

Place the chicken breasts in a shallow dish and brush the mixture evenly onto both sides of the chicken.

In a separate bowl, combine breadcrumbs, mozzarella cheese, spinach, parsley, garlic, and a pinch of salt and pepper. In another bowl, mix together cream cheese, sun-dried tomatoes, and artichoke hearts until well combined.

Lay the chicken breasts flat and make a horizontal incision in each breast to create a pocket.

Stuff each breast with the cream cheese mixture, dividing it evenly among the 10 breasts. Coat each stuffed chicken breast with the breadcrumb mixture, pressing gently to adhere.

Place the coated chicken breasts in a single layer in the air fryer basket.

You may need to cook them in batches depending on the size of your air fryer. Cook the chicken for 12-15 minutes or until cooked through and the internal temperature reaches 165°F (74°C).

Flip the chicken halfway through cooking.
